Sourdough Waffles

ISO a new sourdough starter (my long suffering starter perished in the move up north) so I can make these sourdough waffles as a special ‘welcome to the homestead’ breakfast for my sweetie.

I’m currently working on growing a new starter / rehydrating some crusty old starter bits; in the mean time this recipe still works well without the starter, just replace it with thick coconut or greek yogurt. Sourdough Waffles Recipe

I promise you, this dairy-free, wheat-free 100% spelt sourdough recipe is entirely worth the effort for a special Sunday breakfast (gluten-free options below).

Ingredients

  • 1/3 cup sourdough starter

  • 2 tbs maple syrup

  • 1 1/2 cup spelt flour or gluten free flour blend

  • 1 egg, room temperature

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup plant milk

  • 2 tsp ceylon cinnamon

Mix the sourdough starter together gently in a large bowl with the other wet ingredients (egg, milk, maple syrup), then add the dry ingredients and mix well. Cook on a pre-heated waffle iron & serve with more maple + fresh fruit.
